Carolina Cole Slaw

carolinacoleslawThis tangy, vinegar-based cole slaw is traditionally paired with Lexington, North Carolina-style barbecue, but you can enjoy it with most any dish.

Yields: 8 to 10 servings

Ingredients:

  • 1/2 cup sugar
  • 1/2 cup white vinegar
  • 1/2 cup ketchup
  • 1/4 cup vegetable oil
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1 16-oz bag cole slaw mix

Directions:

  1. Combine sugar, vinegar, ketchup, oil, salt, and garlic powder in a large glass measuring cup. Cover and microwave on HIGH 2 1/2 minutes.
  2. Pour cole slaw mix in a large bowl. Pour hot mixture over cole slaw mix. Chill at least two hours
